Build with jekyll/minimal:4.4.1.

The unpinned jekyll/minimal was repointed on 2026-07-02 from the old
Alpine image to a Debian one that has no jekyll user. The chown the
old image needed (its jekyll wrapper dropped to that user) failed, and
CI build #47 never ran Jekyll. The new image runs Jekyll as root, so
the chown goes; the tag is pinned so that a repointed latest cannot
change the build again.
